It depends on the type of cheese, as well as the type of packaging and the environment where it's left out. In general, the harder and drier the cheese, the longer it can stay at room temperature safely. A block of sharp cheddar, for instance, can safely stay out overnight even if the package has been opened, though you'll probably want to trim off any edges that have discolored or dried out. Softer and wetter cheeses like Brie or processed sandwich slices should not be left out more than a couple of hours, regardless of packaging.
