It's a middle eastern dish, that is similar to rice but the grains are small spheres. More accurately it is a middle eastern pasta, made from semolina dough, the dough is rubbed to give the small grainy-like texture that is couscous. For comparison see something like fregola, which is similar but of larger size. Bulghur wheat (cracked durum wheat) is also a nice comparison, though not a pasta like couscous.
